Quick and vibrant Spanish-style paella, a balanced and nutritious meal ready in minutes.
Ingredients:
  • 18.20 gm olive oil
  • 500g chicken breast fillets (preferably with skin), cut into bite-sized pieces
  • 1 onion, finely chopped
  • 1 chorizo sausage*, chopped
  • 200g basmati rice
  • 1 tsp ground turmeric
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 1 red capsicum, chopped
  • 1 small red chilli, seeds removed, finely chopped
  • 500ml chicken stock
  • 250g cooked prawns, peeled
  • 425g can cannellini beans, rinsed, drained
  • 100g baby green beans, topped, blanched, refreshed in cold water
  • 40.00 ml chopped coriander leaves
Instructions:
  • Warm the oil in a large deep frypan over medium heat.
  • Sear chicken pieces in batches for 3-4 minutes until golden and fully cooked. Transfer to paper towel to drain.
  • Sauté chorizo and onion in a pan until chorizo starts to crisp, about 1-2 minutes. Stir in rice and turmeric for 2 minutes. Add chopped tomatoes, capsicum, garlic, chilli, and stock.
  • Boil until absorbed, lower heat, cook for 15 minutes. Add chicken, prawns, cannellini beans, and green beans back to the pan.
  • Warm and mix for 1 minute until fully heated.
  • Incorporate the fresh coriander and plate with lemon wedges for immediate enjoyment.
