Zucchini slices pan-fried until crunchy with golden breadcrumbs - a flavorful veggie side, snack, or starter.
Ingredients:
  • 1 zucchini, cut into 1/4-inch slices
  • 1 clove garlic, peeled
  • 1 egg, beaten
  • 2 tablespoons all-purpose flour
  • 2 tablespoons dry bread crumbs, or more as needed
  • 2 tablespoons olive oil, or more as needed
Instructions:
  • Massage zucchini slices with aromatic garlic, then set aside.
  • Set out a trio of small bowls and divide the beaten egg, flour, and bread crumbs among them.
  • Coat zucchini slices in flour, shaking off any excess. Dip in egg, then coat with bread crumbs pressing gently to adhere.
  • In a large skillet over medium-high heat, fry the breaded zucchini in batches in olive oil until golden brown on both sides, which should take around 5 minutes.
