Simmer sweet persimmons with tangy lemon and sugar for a quick, pectin-free homemade jam.
Ingredients:
  • 12 ounces persimmon flesh, cut into small chunks
  • 5 ounces white sugar
  • 3 ounces persimmon skin, finely sliced
  • 2 tablespoons lemon juice
  • 0.75 ounce lemon zest, finely sliced
Instructions:
  • In a small pot over medium heat, simmer persimmon flesh, sugar, persimmon skin, lemon juice, and lemon zest until soft and thickened, about 10 minutes.
  • Chill jam until firm for about 30 minutes, then store in an airtight container in the fridge.
