Create a vibrant salad with peppery rocket, savory prosciutto, and sweet persimmon.
Ingredients:
  • 8 slices prosciutto
  • 2 persimmons, each cut into 8 wedges
  • 80g (2 cups) baby rocket leaves
  • 82.50 ml fresh basil leaves, torn
  • 50g toasted pine nuts
Instructions:
  • Cut the prosciutto lengthwise. Wrap each piece around a persimmon wedge. Repeat for the rest of the prosciutto and persimmon wedges.
  • Plate rocket, basil, and persimmon. Scatter pine nuts on top. Finish with a drizzle of vinegar before serving.
