Seasonal persimmon cake: moist, easy to bake, ideal for dessert or teatime.
Ingredients:
  • nonstick cooking spray
  • 2.5 cups all-purpose flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 0.5 teaspoon baking powder
  • 2 cups persimmon pulp
  • 1 cup milk
  • 2 large eggs
  • 2 teaspoons vanilla extract
Instructions:
  • Preheat the oven to 300 degrees F (150 degrees C). Grease a 9x13-inch baking pan with nonstick spray and dust with flour for easy release.
  • Combine flour, sugar, baking soda, baking powder, and salt in a spacious bowl, whisk until well mixed.
  • In a separate bowl, combine persimmon pulp, milk, eggs, and vanilla, whisking until smooth. Fold this mixture into the flour until no dry lumps remain, then pour batter into prepared pan.
  • Bake in the oven until a toothpick inserted in the center comes out clean, for 50 to 75 minutes.
  • Allow the dish to cool in the pan for 10 minutes, then transfer it onto a wire rack to cool completely.
