Festive persimmon cookies with raisins, walnuts, and warm spices - a delicious seasonal delight.
Ingredients:
  • 2 ripe persimmons, pureed
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground nutmeg
  • 1 cup white sugar
  • 0.5 cup butter
  • 1 large egg
  • 1 cup raisins
  • 1 cup chopped walnuts
Instructions:
  • Preheat the oven to 350°F (180°C) and grease the cookie sheets.
  • In a small bowl, mix persimmon pulp with baking soda until dissolved and set aside. In a separate large bowl, sift together flour, cinnamon, cloves, nutmeg, and salt; set aside.
  • Using an electric mixer, blend sugar and butter in a separate large bowl until smooth. Incorporate egg and persimmon mixture; then add flour mixture and stir until just combined. Gently fold in raisins and walnuts.
  • Scoop batter onto lined baking sheets, spacing 2 inches apart.
  • Bake in the preheated oven for 15 minutes or until edges are golden. Let cool on the baking sheet briefly before transferring to a wire rack to cool completely.
