Festive persimmon spice cookies with raisins and nuts. Perfect for Christmas!
Ingredients:
  • 0.5 cup shortening
  • 1 egg
  • 1 cup persimmon pulp
  • 1 cup all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground cloves
  • 0.5 cup raisins
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease the cookie sheets for baking.
  • In a large bowl, mix the shortening and sugar until creamy. Add the egg and persimmon pulp. In a separate bowl, combine flour, baking soda, cinnamon, cloves, and salt; then add to the persimmon mixture. Gently stir in the raisins and walnuts. Spoon teaspoonfuls of the batter onto cookie sheets, 2 inches apart.
  • Bake for 12 to 15 minutes in the preheated oven until edges are firm. Cool on the cookie sheets for 1 minute, then transfer to wire racks to cool completely.
