Spiced persimmon cookies with orange zest, nuts, and dried fruit, reminiscent of miniature fruitcakes. Topped with a persimmon and orange glaze, these cookies are irresistibly delicious.
Ingredients:
  • For the cookies:
  • 1 cup very ripe persimmon pulp
  • 1/2 teaspoon baking soda
  • 1/2 cup white granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup (4 oz, 1 stick) unsalted butter, at room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon grated orange zest
  • 2 cups (270 g) flour
  • 1 teaspoon cinnamon
  • 2 teaspoons baking powder
  • 1/4 teaspoon ground cloves
  • 1 cup chopped walnuts
  • 1 cup chopped dried cranberries, raisins, or dates
  • For the glaze:
  • 2 cups confectioner's sugar
  • 2 Tbsp orange juice
  • 1 Tbsp persimmon puree
  • 1 tsp grated orange peel
Instructions:
  • Blend the ripe persimmon pulp until smooth using a blender, food processor, or mini chopper. Stir in 1/2 teaspoon of baking soda.
  • Whip up the wet mix: In a large bowl, combine the butter and sugars, incorporating the egg and vanilla extract. Stir in the persimmon purée and orange zest.
  • Mix together flour, baking powder, cinnamon, ground cloves, and salt in a separate bowl until well combined.
  • Combine the dry ingredients with the persimmon mixture in thirds, stirring until just combined. Mix in the nuts and dried fruit. Refrigerate the dough for 1 hour before proceeding.
  • Preheat oven to 350°F. Place cookie dough rounds (1 1/2 inches across) on nonstick cookie sheets, spacing them at least 1 inch apart. Bake for 15-18 minutes until cookies are golden around the edges and springy to the touch in the center. Cool on wire racks before adding frosting.
  • Prepare the glaze by sifting confectioner's sugar and whisking with 2 tablespoons of orange juice until smooth. Stir in 1 tablespoon of persimmon puree and 1 teaspoon of orange zest until smooth. If needed, add more orange juice until desired consistency. Drizzle the glaze over cookies and allow it to set before serving.
