Delicious homemade persimmon cookies - simple and tasty!
Ingredients:
  • 4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 cup butter
  • 2 cups white sugar
  • 2 eggs
  • 2 cups persimmon pulp
Instructions:
  • Preheat your oven to 375°F (190°C).
  • Combine flour, baking soda, cinnamon, and ginger in a bowl and set aside. Cream butter and sugar with an electric mixer until smooth. Add eggs one at a time, mixing well after each addition. Blend in persimmon pulp. Gently fold in the flour mixture until just combined. Drop spoonfuls of dough 2 inches apart onto ungreased baking sheets.
  • Bake in the preheated oven for about 12 minutes until slightly puffed and golden brown. Let cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
