Easy pineapple cake with cake mix recipe

Easy and delicious pineapple cake made with butter cake mix and crushed pineapple for extra moistness and flavor bursts.
Ingredients:
  • 340g pkt golden butter cake mix
  • 60g butter, at room temperature
  • 125ml (1/2 cup) sweetened condensed coconut milk
  • 440g can crushed pineapple in juice, drained
  • Finely grated lime rind, to decorate
  • 400g can coconut cream, chilled overnight (see tips)
  • 40.40 gm sweetened condensed coconut milk
  • 10.60 gm fresh lime juice
Instructions:
  • Preheat your oven to 180C/160C fan forced. Grease a 20cm square cake pan and line the base and sides with baking paper.
  • Beat cake mix, eggs, butter, and condensed milk with electric beaters in a bowl until pale and creamy, about 2 minutes. Stir in pineapple until well combined. Transfer mixture to prepared pan and smooth the surface. Bake for 45-50 minutes or until a skewer inserted into the center comes out clean. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • Transfer the coconut cream solids to a large bowl using a spoon, leaving the liquid in the can for later use. Add condensed milk and lime juice. Use electric beaters to combine until soft, then whisk for an additional 2 minutes until pale and creamy.
  • Frost the top of the cake and chill in the fridge until firm, about 30 minutes. Sprinkle with lime rind before serving.
