Quick and delicious pork and ramen stir-fry with fresh veggies.
Ingredients:
  • 1 tablespoon vegetable oil
  • 3/4 pound pork tenderloin, cut into 1/8-inch strips
  • 2 packages (3 ounces each) pork-flavored ramen noodles
  • 1 1/2 cups water
  • 1 medium red bell pepper, cut into 3/4 inch pieces (1 cup)
  • 1 cup broccoli flowerets
  • 4 medium green onions, cut into 1-inch pieces (1/2 cup)
  • 1 tablespoon chopped fresh parsley or 2 teaspoons parsley flakes, if desired
  • 1 tablespoon soy sauce
Instructions:
  • Heat a 12-inch skillet or wok over medium-high heat and add oil, swirling it around to coat the sides evenly.
  • Add succulent pork to the sizzling pan, stir-frying for approximately 5 minutes until the pork transforms into a delightful shade of cooked perfection.
  • Break apart noodles with care. Mix noodles, flavor packet seasonings, and remaining ingredients with pork. Bring to a boil and cook for 3 to 4 minutes, stirring occasionally, until noodles are tender.
