Easy Provencal tart

Simple and delicious tart, ideal for outdoor dining.
Ingredients:
  • 20cm x 30cm rectangular pizza base (or other large pizza base)
  • 80ml passata
  • 2 roasted capsicum (red and yellow), skin and seeds removed, cut into strips
  • 8 anchovies, halved lengthways
  • 82.50 ml pitted black olives
  • Small basil leaves, to garnish
  • Green salad, to serve
Instructions:
  • Preheat the oven to a toasty 200°C and lightly oil a baking tray. Lay the pizza base on the tray, spread with passata, top with capsicum slices, then criss-cross the anchovies on top. Crown each anchovy square with an olive and bake for 10 minutes until crispy. Sprinkle with fresh basil, slice, and serve hot alongside a fresh green salad. Enjoy!
