Salmon baked with a flavorful Provencal sauce made with fresh tomatoes, herbs, shallots, lemon juice, balsamic, and olive oil.
Ingredients:
  • 3 large plum tomatoes, coarsely chopped
  • 3 shallots, coarsely chopped
  • 1 tablespoon fresh tarragon, chopped
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon balsamic vinegar
  • Salt
  • 2 tablespoons extra virgin olive oil
  • 4 salmon fillets, about 5-6 ounces each
  • Freshly ground black pepper
Instructions:
  • Preheat your oven to 400°F.
  • Prepare the tomatoes: Score the ends with a knife, blanch in simmering salted water for 15-30 seconds, then transfer to ice water for 1 minute. Peel, core, and dice the tomatoes.
  • In a large bowl, mix together tomatoes, tarragon, basil, chives, and olive oil. Season with salt to taste.
  • Combine lemon juice, vinegar, and shallots: Blend them together to mellow the sharpness of the shallots with the acidity of the lemon juice and vinegar.
  • Prepare the salmon fillets: Place the salmon fillets on a lightly oiled baking sheet, ensuring they are not crowded. Drizzle with olive oil, sprinkle with a touch of salt, and bake until the edges are lightly browned and the salmon is just cooked through, about 8-12 minutes, adjusting the time for thicker fillets.
  • Combine dressing with tomato mixture, spoon generously around each salmon fillet. Sprinkle with freshly ground black pepper and serve promptly.
