Nutritious mac and cheese with whole wheat pasta and creamy pumpkin puree.
Ingredients:
  • 13.25 ounces whole wheat spiral pasta
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, chopped
  • 0.25 cup whole wheat flour
  • 2 cups soy milk
  • 1.5 cups pumpkin puree
  • 1 (8 ounce) package shredded Cheddar cheese
Instructions:
  • In a large pot, bring salted water to a lively boil. Add pasta and cook, stirring occasionally, until al dente, about 12 minutes.
  • Heat oil in a saucepan over medium heat. Saute onion and garlic until softened and lightly browned, for about 5 minutes. Add whole wheat flour, followed by soy milk, pumpkin puree, and Cheddar cheese.
  • Mix the drained pasta with the sauce and cook together until heated through, approximately 5 minutes.
