Easy pumpkin cobbler, bursting with fall flavors, perfect for holidays.
Ingredients:
  • cooking spray
  • 0.5 cup white sugar
  • 2 large eggs, beaten
  • 1 (15 ounce) can pumpkin puree
  • 0.75 cup evaporated milk
  • 1 teaspoon orange extract
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon salt
  • 1 (9 ounce) package yellow cake mix (such as Jiffy® Golden Yellow cake mix)
  • 0.25 cup unsalted butter, melted
Instructions:
  • Prepare all ingredients first. Preheat the oven to 350 degrees F (175 degrees C), and lightly grease an 8-inch square baking dish with cooking spray.
  • In a bowl, whisk together the sugar and eggs until light and fluffy.
  • Combine pumpkin puree, evaporated milk, orange extract, cinnamon, ginger, cloves, and salt until fully mixed. Transfer the pumpkin mixture into the baking dish.
  • Sprinkle cake mix gently over the pumpkin mixture until fully coated. Drizzle melted butter slowly over the cake mix.
  • Bake in the oven until the pumpkin mixture sets and the topping turns golden brown, which generally takes 50 minutes to 1 hour.
