Elegant quiche with bacon, onion, and Swiss cheese in a tender crust - perfect for breakfast!
Ingredients:
  • 1 unbaked 9 inch pie crust
  • 6 slices bacon
  • 1.5 cups milk
  • 3 large eggs, beaten
  • 0.25 teaspoon salt
  • 1.5 cups shredded Swiss cheese
  • 1 tablespoon all-purpose flour
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C).
  • Wrap pie crust in a double layer of aluminum foil and bake in the preheated oven for 8 minutes. Remove foil and bake until crust is just set, 4 to 5 minutes more. Lower oven temperature to 325 degrees F (165 degrees C).
  • In a large skillet, cook the bacon over medium-high heat, flipping occasionally, until it's perfectly crispy, which should take around 10 minutes. Once done, let the bacon drain on paper towels, crumble it, and set it aside. Remember to keep 2 tablespoons of that delicious bacon grease right in the skillet for extra flavor.
  • Saute the onion in the skillet with the remaining grease over medium heat until soft; then remove and set aside.
  • In a large bowl, combine milk, eggs, and salt. Mix in bacon and onion. In a separate medium bowl, toss Swiss cheese with flour, then add to the egg mixture and stir until well combined. Pour the mixture into the partially baked crust.
  • Bake in the preheated oven for 35 to 40 minutes or until a knife inserted into the center comes out clean. If the crust edges start to brown too much, simply cover them with foil. Allow the quiche to cool for 10 minutes before serving.
