Easy Rhubarb Jam

Whip up a delicious rhubarb treat using fresh garden produce - a favorite in my household!
Ingredients:
  • 5 cups chopped fresh rhubarb
  • 4 cups white sugar
  • 1 (20 ounce) can crushed pineapple, drained
  • 1 (6 ounce) package strawberry flavored Jell-O®
Instructions:
  • Combine rhubarb, sugar, and pineapple in a large saucepan over medium-high heat. Boil for 10 minutes, stirring occasionally. Sterilize jars simultaneously.
  • Once the rhubarb mixture has simmered for 10 minutes, take it off the heat and gently mix in the strawberry flavored gelatin powder. Pour the mixture into clean jars, seal tightly, and process in a boiling water bath for 15 minutes. Let the jars cool in a spot without drafts. Refrigerate after opening the seal.
