Crave-worthy almond cookies with oat flour, ground almonds, real maple syrup, and a hint of almond essence.
Ingredients:
  • 1 cup raw whole almonds
  • 1 cup oat flour
  • 0.5 cup real maple syrup
  • 1 teaspoon almond extract
Instructions:
  • Preheat your oven to 275 degrees F (135 degrees C). Spread the almonds on a baking sheet and toast for about 45 minutes until golden brown and fragrant. Be sure to keep an eye on them to prevent burning. Let the toasted almonds cool to room temperature before finely grinding them in a food processor.
  • Preheat oven to 350 degrees F (175 degrees C) and grease a baking sheet with vegetable oil.
  • Combine ground almonds, oat flour, maple syrup, and almond extract in a bowl. Shape the mixture into 6 balls and flatten them into 1/4 inch thick cookies. Transfer cookies to the baking sheet.
  • Bake for 12 to 15 minutes until golden brown around the edges, carefully monitoring to prevent burning. Remove the cookies gently and let cool.
