Oven-roasted veggies layered with noodles, tomato sauce, and gooey mozzarella and Parmesan cheese.
Ingredients:
  • olive oil cooking spray
  • 2 zucchini, sliced
  • 2 green bell peppers, cut in 1-inch pieces
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 onion, cut into 8 wedges
  • 1 tablespoon chopped fresh basil
  • 1 clove garlic, pressed
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 12 lasagna noodles
  • 2 (28 ounce) jars pasta sauce
  • 1 (16 ounce) package shredded mozzarella cheese
  • 1 cup freshly shredded Parmesan cheese
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C, gas mark 6) and give a generous spray of cooking oil on a large baking sheet.
  • Place zucchini, bell peppers, mushrooms, and onion wedges on baking sheet. Sprinkle basil and garlic over the vegetables, then mist with cooking spray. Season with salt and black pepper.
  • Roast in a hot oven until vegetables are caramelized and fork-tender, for 10 to 25 minutes.
  • 1. Boil a large pot of lightly salted water. 2. Add lasagna noodles and stir occasionally until al dente, about 8 minutes. 3. Drain cooked lasagna noodles.
  • Simmer pasta sauce in a saucepan over medium-high heat. Combine mozzarella and Parmesan cheese in a bowl.
  • Begin by elegantly drizzling approximately 1/3 cup of pasta sauce in a spacious 9x13-inch baking dish. Place a delicate layer of 3 lasagna noodles over the sauce with finesse. Scatter about 1/4 of the roasted vegetables over the noodles and gracefully top them with 1/4 of the sauce. Sprinkle a quarter of the delightful mozzarella-Parmesan cheese mixture over the sauce, ensuring an even distribution. Repeat these lush layers three more times, culminating in a beautiful crown of the remaining cheese.
  • Bake until the cheese is gooey and the sauce is bubbling, for about 20-25 minutes. Let the lasagna sit for 10 minutes before cutting into it.
