Try this crispy roasted vegetable side to make veggies kid-friendly!
Ingredients:
  • 3 carrots
  • 2 bulbs beetroot
  • 2 parsnips
  • 1 swede or 2 turnips
  • 85g breadcrumbs
  • 45g parmesan
  • 82.50 ml chopped fresh continental parsley
  • 40.00 ml fresh oregano
  • 40.00 ml sage leaves
Instructions:
  • 1. Preheat your oven to 200°C. 2. Peel and cut 3 carrots, 2 bulbs of beetroot, 2 parsnips, and 1 swede or 2 turnips into large chunks. 3. Place the vegetables in a 1.5 litre ovenproof dish and drizzle with 1 tablespoon of olive oil. 4. Roast for 55 minutes or until tender.
  • Next, combine 1 1/2 cups (85g) fresh breadcrumbs, 1/2 cup (45g) coarsely grated parmesan, 1/3 cup chopped fresh continental parsley, 2 tablespoons each of fresh oregano and sage leaves, and 2 tablespoons of olive oil.
  • Top the roasted vegetables with a generous sprinkle and bake until golden brown, approximately 15-20 minutes.
