Thai-style salmon on cucumber ribbons, a quick and delicious weeknight meal option.
Ingredients:
  • 60ml lime juice
  • 21.00 gm light soy sauce
  • 20.00 gm caster sugar
  • 1 long red chilli, seeded, finely chopped (optional)
  • 5cm-piece ginger, peeled, cut into matchsticks
  • 1 garlic clove, crushed
  • 4 (about 120g each) skinless salmon fillets
  • 2 Lebanese cucumbers, peeled into ribbons
  • 1 red onion, thinly sliced
  • 200g Perino tomatoes, halved
  • 75g cashew
  • 250.00 ml mint leaves
  • 250.00 ml coriander leaves
Instructions:
  • Combine lime juice, soy sauce, sugar, chili (if using), ginger, and garlic in a small bowl. Stir until the sugar is fully dissolved.
  • Preheat a barbecue grill or chargrill on medium-high heat. Season the salmon and grill for 2-3 minutes on each side or until cooked to your preference. Let it rest for 5 minutes before serving.
  • In a large bowl, mix cucumber, onion, tomato, cashews, mint, and coriander. Drizzle with 2 tablespoons of the sauce, toss well. Serve on plates, top with salmon, and drizzle with the remaining sauce.
