Quick and easy Thai-style salmon with hot and sour dressing - ready in under 30 minutes for a delicious weeknight dinner.
Ingredients:
  • 200g dried thin rice-stick noodles
  • 1 bunch baby pak choy, finely shredded
  • 6 radishes, thinly sliced
  • 1 Lebanese cucumber, cut into matchsticks
  • 125.00 ml fresh mint leaves
  • 125.00 ml coriander leaves
  • 185g hot-smoked salmon, skin removed, coarsely flaked
  • 45g peanuts
  • 36.80 gm rice bran oil
  • 60ml lime juice
  • 3cm-piece fresh ginger, peeled, cut into matchsticks
  • 1 red birdseye chilli, seeded, finely chopped
  • 20g shallot
Instructions:
  • Place noodles in a heatproof bowl and cover with boiling water. Let sit for 6-7 minutes or until tender. Refresh under cold water, drain, and cut into 10cm lengths using kitchen scissors before returning them to the bowl.
  • Combine the pak choy, radish, cucumber, mint, coriander, salmon, and peanuts delicately.
  • Combine oil, lime juice, ginger, and chili in a screw-top jar and shake well. Drizzle over the salmon mixture, toss to combine, and serve sprinkled with fried shallots.
