Sesame chicken stir-fry with flavorful homemade teriyaki dressing.
Ingredients:
  • 0.5 cup low-sodium soy sauce
  • 0.5 medium orange, juiced
  • 2 teaspoons sesame oil
  • 2 teaspoons stevia powder
  • 0.5 teaspoon garlic powder
  • 0.125 teaspoon ground ginger
  • 1 tablespoon vegetable oil
  • 2 (8 ounce) skinless, boneless chicken breasts, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 1 cup broccoli florets
  • 0.5 cup canned bamboo shoots, drained
  • 0.5 cup chopped red bell pepper
  • 0.5 cup chopped yellow bell pepper
  • 0.5 cup chopped orange bell pepper
  • 0.5 cup thinly sliced green onion
  • 1 tablespoon black sesame seeds
  • 1 cup cooked long-grain white rice
  • 1 cup cooked wild rice
Instructions:
  • In a small saucepan, mix together soy sauce, orange juice, sesame oil, stevia powder, garlic powder, and ginger for the teriyaki dressing. Bring the mixture to a boil over medium-high heat, stirring constantly until slightly thickened. Set aside.
  • Heat vegetable oil in a large skillet until shimmering. Cook chicken and garlic for 2 to 3 minutes. Stir in broccoli and cook for 4 to 6 minutes. Add bamboo shoots and bell peppers, cook for an additional 4 to 6 minutes.
  • Pour the teriyaki dressing into the skillet with caution to prevent splattering. Cook until the chicken is no longer pink in the center, the juices run clear, and the vegetables are tender, approximately 5 more minutes.
  • Take the mixture off the heat and fold in green onion and sesame seeds, leaving some for topping. Serve hot over cooked white and wild rice, garnishing with the remaining green onions and sesame seeds.
