Quick and tasty chicken stir fry - perfect for busy weeknights!
Ingredients:
  • 350g fresh thin Singapore noodles
  • 49.50 gm sesame seeds
  • 500g chicken tenderloins
  • 18.20 gm peanut oil
  • 1 medium brown onion, cut into thin wedges
  • 1 garlic clove, crushed
  • 300g broccolini, trimmed, chopped
  • 48.80 gm fish sauce
  • 20.80 gm hot chilli sauce
  • 42.00 gm dark soy sauce
  • 250.00 ml beansprouts, trimmed
  • 1 long red chilli, seeded, thinly sliced
Instructions:
  • Prepare the noodles according to package instructions, then drain them.
  • Spread sesame seeds on a plate and coat chicken by rolling it in the seeds. Heat half of the oil in a large non-stick frying pan over medium heat. Cook chicken in batches for 2 to 3 minutes on each side until golden and cooked through. Transfer to a large plate lined with paper towel.
  • Heat a wok over high heat. Add the rest of the oil. Stir-fry onion, garlic, and broccolini for 2 minutes until onion softens. Add noodles, fish sauce, chili sauce, soy sauce, beansprouts, half of the chili, and green onions. Stir-fry for 5 minutes until heated through. Divide noodle mixture into serving bowls and top with chicken. Garnish with remaining chili and green onions before serving.
