Taiwanese ginger sesame chicken stew with somen noodles.
Ingredients:
  • 1.5 pounds bone-in chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 0.75 cup rice wine
  • 0.75 cup dark sesame oil
  • 2 tablespoons light sesame oil
  • 7 slices fresh ginger root
  • 1.5 cups water
  • 1 (16 ounce) package uncooked somen noodles
Instructions:
  • 1. Boil a large pot of water, add the chicken pieces, cook for 2 minutes, then drain. 2. Heat vegetable oil in a large skillet over high heat. Brown the chicken for about 3 minutes. 3. Add rice wine, dark sesame oil, light sesame oil, and ginger. Simmer over medium heat for 3 minutes. 4. Pour in the water, bring to a boil, and cook until chicken is no longer pink and pulls away from the bone, about 5 minutes.
  • Fill a large pot with salted water and bring to a rolling boil. Add the somen noodles a few at a time and cook until firm to the bite, about 5 to 7 minutes. Drain in a colander.
  • Incorporate the somen noodles into the flavorful simmering chicken before serving.
