Whip up a quick, tasty sesame chicken with soba noodles in just 30 minutes.
Ingredients:
  • 1 (8 ounce) package dried soba noodles
  • 3 tablespoons soy sauce
  • 3 tablespoons brown sugar
  • 1 pound boneless, skinless chicken breasts, cubed
  • 2 tablespoons sesame seeds
  • 0.5 cup olive oil
  • 3 tablespoons rice vinegar
  • 1 tablespoon finely grated ginger
  • 1 (7 ounce) package mixed salad greens
Instructions:
  • Bring a pot of salted water to a rolling boil. Add soba noodles and cook until tender yet firm, about 5 to 7 minutes. Drain and rinse with cold water.
  • In a large skillet over medium heat, combine soy sauce and brown sugar. Add chicken and cook until no longer pink in the center and the juices run clear, about 5 to 7 minutes. Transfer chicken to a bowl, sprinkle with sesame seeds, and toss to coat.
  • Combine olive oil, vinegar, and ginger in a bowl, whisking until well mixed. Divide greens among four plates, then add soba noodles and chicken on top. Drizzle with vinaigrette before serving.
