Ingredients:
  • 49.50 gm sesame seeds
  • 600g chicken tenderloins, trimmed, halved
  • 27.30 gm peanut oil
  • 270g packet dried soba noodles
  • 2.50 gm cornflour
  • 82.50 ml teriyaki sauce
  • 1/4 tsp sesame oil
  • 100g snow peas, trimmed, halved diagonally
  • 2 green onions, thinly sliced
Instructions:
  • Spread sesame seeds evenly on a large plate. Add chicken and toss until fully coated.
  • In a large non-stick frying pan set over high heat, heat 1 tablespoon of oil. Cook chicken in batches for 2 to 3 minutes per side until golden and fully cooked. Transfer to a plate lined with paper towel to absorb excess oil.
  • Cook noodles in a large saucepan of boiling water according to package instructions until tender. Drain and rinse under cold water.
  • In a bowl, combine cornflour with teriyaki sauce gradually, stirring until smooth. Mix in sesame oil. Heat a frying pan over high heat, then add the rest of the peanut oil and swirl to coat the pan. Stir-fry snow peas and onion for 1 minute until snow peas are bright green and tender.
  • Combine the cornflour mixture and noodles in the wok, stir-fry for 2 to 3 minutes until heated. Serve with chicken.
