Create a stunning 6-layer rainbow cake with a light mascarpone cream frosting from scratch!
Ingredients:
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.75 cup unsalted butter, softened
  • 2 tablespoons unsalted butter, softened
  • 1.3333333730698 cups milk
  • 1 cup white sugar
  • 5 large egg whites
  • food coloring in 6 rainbow colors (red, orange, yellow, green, blue, violet)
  • 2.5 cups heavy whipping cream
  • 0.33333334326744 cup confectioners' sugar
  • 2 (8 ounce) containers mascarpone cheese
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C), then generously grease and flour six 9-inch round cake pans.
  • Combine the flour, baking powder, and baking soda by sifting them together.
  • Using an electric mixer, blend together 3/4 cup plus 2 tablespoons of butter, milk, sugar, egg whites, and vanilla extract until smooth. Add the flour mixture and mix until just combined.
  • Divide cake batter among 6 bowls and stir in a few drops of different food coloring into each, creating a vibrant array of 6 colors. Begin with 1 to 2 drops per bowl, mix well, and adjust as needed for intensity.
  • Bake each cake in the hot oven until a toothpick inserted in the center comes out clean, for 15 to 20 minutes. Allow the cakes to cool.
  • In a chilled glass or metal bowl, whip cream with an electric mixer until stiff peaks form. In a separate bowl, combine confectioners' sugar and mascarpone cheese, then gently fold into the whipped cream until smooth.
  • Frost each layer of the cooled cake and stack them. Use the remaining frosting to cover the top and sides. Chill for 2 hours before enjoying.
