Classic chocolate mousse

Make effortlessly velvety mousse in six easy steps.
Ingredients:
  • 200g dark cooking chocolate, finely chopped
  • 25g butter
  • 3 eggs, separated, at room temperature
  • 4.40 gm vanilla extract
  • 310ml (11 ⁄4 cups) thickened cream
Instructions:
  • Combine the chocolate, butter, and 60ml (1⁄4 cup) cream in a large heatproof bowl over a saucepan of simmering water until melted. Let it sit for 5 minutes to cool slightly.
  • Gently combine egg yolks and vanilla extract into the melted chocolate mixture using a metal spoon, being careful not to overmix to prevent the chocolate from hardening.
  • Beat the remaining cream in a bowl with electric beaters until soft peaks form, making sure the cream just clings to the beaters when lifted.
  • Using a metal spoon, delicately combine half of the whipped cream into the chocolate mixture. Gradually fold in the remaining cream.
  • Beat the egg whites using electric beaters in a clean, dry bowl until soft peaks form, with the peaks curving slightly when the beaters are lifted.
  • Gently fold in half of the egg white into the chocolate mixture, followed by the remaining egg white. Divide the mixture among 6 glasses, cover, and chill in the fridge for 3 hours to set.
