Chocolate mousse doughnut tiramisu

Surprise Tiramisu: Classic dessert gets a fun twist with doughnuts.
Ingredients:
  • 200g dark chocolate, chopped
  • 40.00 ml instant espresso coffee powder
  • 62.50 ml coffee-flavoured liqueur (optional)
  • 250.00 gm boiling water
  • 500g mascarpone, softened (see notes)
  • 49.50 gm icing sugar mixture
  • 42.90 gm Dutch-processed cocoa powder, sifted
  • 600ml thickened cream, whipped (see notes)
  • 18 cinnamon doughnuts
  • 300ml thickened cream, whipped, extra, to serve
  • Grated dark chocolate, to serve
Instructions:
  • Place the chocolate in a microwave-safe bowl and microwave on HIGH, stirring every 30 seconds with a metal spoon, until smooth (1 to 2 minutes). Let it cool for 10 minutes.
  • Mix together the coffee powder, liqueur (if desired), and boiling water in a heatproof bowl. Let it sit for 5 minutes to cool slightly before using.
  • 1. In a bowl, whisk mascarpone until silky. Gradually fold in cooled chocolate until fully integrated. Gently combine with icing sugar, cocoa powder, and whipped cream. Avoid overmixing to prevent mousse from separating.
  • Cover the bottom of a 7cm-deep, 23cm x 25cm dish with a layer of mousse. Dunk half of the doughnuts into the coffee mixture one by one, ensuring they are evenly coated and absorb some liquid. Arrange them in a single layer on top of the mousse-covered base, pouring a bit of the coffee mixture over them. Spread half of the remaining chocolate mousse over the doughnuts.
  • Continue layering the remaining doughnuts with the coffee mixture. Top with the rest of the chocolate mousse, ensuring the doughnuts are completely covered. Wrap with plastic wrap and refrigerate for at least 4 hours or overnight.
  • Unwrap and let it sit at room temperature for 10 minutes. Dollop with whipped cream and sprinkle with chocolate. Enjoy!
