"Spanish rice: perfect side dish for steak, chicken, and Mexican cuisine favorites."
Ingredients:
  • 2 tablespoons extra virgin olive oil (can use up to 1/4 cup)
  • 1 onion, finely chopped (about 1 cup)
  • 1 garlic clove, minced (about 1 teaspoon)
  • 2 cups medium or long-grain white rice
  • 3 cups chicken stock (or vegetable stock for vegetarian version)
  • 1 heaping tablespoon tomato paste or 1 cup diced fresh or cooked tomatoes, strained
  • Pinch dried oregano
  • 1 teaspoon salt
Instructions:
  • In a large skillet over medium-high heat, drizzle olive oil and add the rice. Stir to coat the rice with the oil and cook, stirring frequently, until the rice is lightly browned.
  • Saute the onion and garlic: Cook the onion until slightly soft, then add the garlic and continue cooking until the onions are translucent and tender, about 1 minute more.
  • In a separate saucepan, bring the broth, tomato, oregano, salt, browned rice, and onions to a simmer to save time.
  • Combine the rice and broth: Add the browned rice to the simmering broth or vice versa based on the covered pan. Alternatively, add the broth and tomatoes directly to the rice without simmering.
  • Simmer until rice absorbs the stock: Bring to a gentle simmer, cover, and cook over low heat for 15-25 minutes. Let sit for 5 minutes off heat before serving. Don't forget to rate and review the recipe if you enjoyed it!
