Easy Spinach Lentil Soup

Simply delicious lentil soup with carrots, potatoes, spinach, and your favorite veggies.
Ingredients:
  • 4 strips bacon, chopped
  • 1 cup shredded carrots
  • 1 large onion, chopped
  • 1 teaspoon olive oil
  • 6 cups chicken broth
  • 3 cups water
  • 1 cup salsa
  • 16 ounces dried lentils, rinsed
  • 1 bay leaf
  • 1 teaspoon ground cumin
  • 1 teaspoon dried rosemary
  • salt and ground black pepper to taste
  • 1 (10 ounce) package fresh spinach, torn
  • 1 cup cubed potatoes
Instructions:
  • In a large skillet or Dutch oven, sizzle bacon over medium-high heat, flipping occasionally, until perfectly crisp, around 10 minutes. Add carrot, onion, and a drizzle of olive oil, and sauté until softened, approximately 5 minutes.
  • Pour the chicken broth, water, and salsa over the bacon mixture, then add lentils, bay leaf, cumin, rosemary, salt, and pepper. Bring to a boil, then lower the heat, cover, and simmer until lentils are tender for 40 to 50 minutes. Finally, mix in spinach and potatoes and simmer for an additional 10 to 15 minutes until the spinach is wilted and the potatoes are cooked through.
