Easy Sticky Toffee Pudding

Simple and delicious sticky toffee pudding made with common pantry staples.
Ingredients:
  • 1 cup hot black tea
  • 0.75 cup raisins
  • 1 tablespoon milk
  • 6 tablespoons unsalted butter
  • 0.5 cup white sugar
  • 0.33333334326744 cup light brown sugar
  • 2 large eggs
  • 1.3333333730698 cups self-rising flour
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 0.25 cup light brown sugar
  • 2 teaspoons margarine
  • 2 tablespoons golden syrup
Instructions:
  • Preheat the oven to a perfect 355 degrees F (180 degrees C) and generously grease a baking dish.
  • In a bowl, mix hot black tea with raisins and allow to infuse for 5 minutes.
  • After draining the raisins, place them in a food processor. Pour in the milk and blend until smooth.
  • In a bowl, cream together butter, sugar, and brown sugar until fluffy. Whisk in the eggs. Add flour, vanilla, and cinnamon, and mix until combined. Fold in blended raisins and baking soda before pouring the batter into the prepared dish.
  • Bake until a skewer inserted near the center comes out clean, about 35 minutes in the preheated oven.
  • Combine brown sugar, margarine, and golden syrup in a nonstick saucepan over medium-low heat. Cook and stir until the sauce becomes thick and foamy. Turn off the heat and continue stirring until the bubbles subside.
  • Take the pudding out of the oven and generously drizzle the toffee topping over it while it's warm to ensure it spreads evenly. Serve hot.
