Easy summer salsa

Elevate mangoes with zesty coriander and spicy chili salsa. Perfect for grilling gatherings!
Ingredients:
  • 2 ripe mangoes
  • 1 small red onion, finely chopped
  • 1 small fresh red chilli, halved, deseeded, finely chopped
  • 62.50 ml fresh coriander leaves
  • 18.20 gm extra virgin olive oil
  • 21.00 gm fresh lime juice
  • Salt and pepper, to serve
Instructions:
  • Peel and discard the skin from the mangoes. Dice the flesh into 1cm pieces.
  • In a small bowl, mix together the ripe mango, onion, spicy chilli, fresh coriander, high-quality olive oil, and tangy lime juice. Taste and adjust seasoning with a sprinkle of salt and pepper for a burst of flavors.
  • Pair the salsa with pan-fried or chargrilled chicken, pork, or fish for a refreshing summer dish.
