Elevate your steak with a vibrant summer fruit salsa bursting with flavor.
Ingredients:
  • 2 ripe peaches, peeled, halved, stones removed, diced
  • 1 kiwifruit, peeled, diced
  • 2 medium ripe tomatoes, diced
  • 1 small red onion, diced
  • 125.00 ml fresh basil leaves, shredded
  • 1 lime, rind finely grated, juiced
  • Salt & ground black pepper, to taste
  • 18.20 gm olive oil
  • 4 (about 150g each) beef round steaks
  • 380g (2 cups) couscous
Instructions:
  • Combine peaches, kiwifruit, tomatoes, onion, basil, lime rind, and lime juice in a bowl. Season with salt and pepper, toss to mix well. Cover and let sit.
  • In a large frying pan over medium heat, quickly sear the steaks in olive oil for 2-3 minutes on each side to your desired doneness. Transfer the steaks to a plate, tent with foil, and rest for 5 minutes before serving.
  • Prepare the couscous according to the packet instructions before serving the steaks with the salsa and couscous.
