Spicy taco seasoned fried chicken with a tender, juicy center from buttermilk marinade.
Ingredients:
  • 4 skinless, boneless chicken breast halves
  • 1 quart buttermilk
  • 2 (1.25 ounce) packages taco seasoning mix, divided
  • 3 tablespoons olive oil, or more as needed
  • 1.5 cups all-purpose flour
Instructions:
  • Place chicken, buttermilk, and 1 packet of taco seasoning in a resealable plastic bag. Seal the bag and shake well to mix everything together. Refrigerate and let marinate for 8 hours to overnight.
  • Warm a generous amount of oil in a spacious skillet on medium-low heat.
  • Combine the flour and the remaining taco seasoning in a shallow dish or plate. Take the chicken out of the marinade and discard the marinade. Coat the chicken with the flour mixture.
  • Achieve golden perfection by pan-searing chicken in sizzling oil until fully cooked and tender, 15 to 20 minutes. Ensure doneness by verifying an internal temperature of at least 165°F (74°C) with an instant-read thermometer.
