Delicious tomato pie with Swiss and cottage cheese, flavored with basil, parsley, and onion flakes. Enjoy year-round by using canned and dried ingredients in winter, and fresh in summer.
Ingredients:
  • 1 (9 inch) unbaked pie shell
  • 2 eggs, beaten
  • 1 cup whole milk
  • 1 teaspoon salt
  • 0.5 teaspoon dried basil
  • 0.25 teaspoon dried parsley
  • 1.5 tablespoons dried minced onion
  • 0.5 cup cottage cheese
  • 5 plum tomatoes, diced
  • 1.25 cups shredded Swiss cheese
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • Combine eggs, milk, salt, basil, parsley, onion flakes, and cottage cheese in a bowl. Spread tomatoes over pastry shell, top with Swiss cheese, and pour over the egg mixture.
  • Bake in a preheated oven for 45 minutes or until the center is set.
