125 trials later, a perfected one-bowl wonder - the ultimate butter cake recipe with aromatic vanilla. Versatile for various flavors and cake sizes; paired with fool-proof buttercream or ermine frosting. Ideal for cakes and cupcakes.
Ingredients:
  • 450g (3 cups) self-raising flour
  • 440g (2 cups) caster sugar
  • 150g (1 cup) plain flour
  • 6 eggs, at room temperature
  • 300g salted butter, cubed, at room temperature
  • 310ml (1 1/4 cups) milk
  • 13.20 gm vanilla essence
Instructions:
  • Preheat the oven to 140°C and place the rack on the second lowest shelf.
  • Combine self-raising flour, plain flour, sugar, eggs, butter, milk, and vanilla essence in a large mixing bowl. Use an electric beater to mix on low speed until just combined, then increase to high speed and beat until thick and well blended.
  • Prepare a 25cm round cake pan by greasing it lightly with melted butter. Line the base and sides with non-stick baking paper. Pour the mixture into the pan and use the back of a spoon to smooth the surface.
  • Bake in a preheated oven for 2 1/2 hours or until a skewer inserted into the cake comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely for 2 hours.
