Easy vanilla layer cake

Zesty vanilla cake with lemon curd and fresh blueberries - perfect for a delightful tea time treat.
Ingredients:
  • 1 pkt Vanilla Cake
  • 60g butter, softened
  • 2 Free Range Eggs
  • 125ml milk
  • 160g butter, extra, softened
  • 20.60 gm milk, extra
  • 100g lemon curd
  • 125g blueberries
  • 2 tsp lemon zest
Instructions:
  • Preheat your oven to 160C. Grease a 20cm round cake pan and line it with baking paper.
  • With an electric mixer on low, blend cake mix, butter, eggs, and milk for 30 seconds until just combined. Increase speed to medium and beat for 3 minutes. Pour into prepared pan. Bake for 1 hour or until a skewer comes out clean when inserted into the center. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • Combine frosting mix, extra butter, and extra milk in a bowl. Beat on low speed until just combined, about 30 seconds. Increase speed to high and beat for 3 minutes.
  • Slice the cake in half horizontally using a serrated knife. Put the bottom cake layer on a serving platter and spread with half of the frosting. Add lemon curd and half of the blueberries. Spread the top of the other cake half with the remaining frosting. Sprinkle with the rest of the blueberries and lemon zest. Place the second cake half on top of the first one. Serve promptly.
