Indulge in a decadent, moist vegan chocolate cake enhanced by the rich depth of coffee flavor.
Ingredients:
  • 1.5 cups all-purpose flour
  • 0.25 cup cocoa powder
  • 1 teaspoon baking soda
  • 0.33333334326744 cup cold vegan buttery spread (such as Earth Balance®)
  • 0.5 cup soy milk
  • 0.5 cup brewed coffee
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon vanilla extract
Instructions:
  • First, heat your oven to a toasty 350 degrees F (175 degrees C). Then, generously grease and flour an 8-inch round cake pan.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt until smooth. Add buttery spread and using a pastry cutter or 2 knives, cut it in until it resembles small peas and the flour mixture is evenly coated.
  • Combine soy milk, coffee, vinegar, and vanilla extract in a bowl. Mix with an electric mixer until smooth, then beat for an additional 2 minutes. Pour the batter into the prepared pan.
  • Bake in the preheated oven for 35-40 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for at least 10 minutes before flipping onto a wire rack or serving plate.
