Easy Vegetarian Shepherd's Pie

Vegetarian shepherd’s pie, a hearty and savory dish without meat or gravy.
Ingredients:
  • Water, milk and butter called for on potato mix pouch
  • 1 pouch (4.7 oz) Betty Crocker™ four cheese mashed potatoes
  • 1 bag (12 oz) broccoli and cheese sauce or broccoli, carrots, cauliflower and cheese sauce
  • 1 jar (6 oz) sliced mushrooms, drained
  • 1 can (2.8 ounces) French-fried onions
Instructions:
  • 1. Preheat the oven to 350°F. Bring water, milk, and butter to a rapid boil in a 2-quart saucepan. Remove from heat, then stir in potatoes until just moistened. Allow it to stand for about 1 minute until the liquid is absorbed. Whip with a fork until smooth and set aside.
  • Prepare vegetables according to package instructions. Combine vegetables and mushrooms in a medium bowl. Transfer vegetable mixture to an ungreased 1 1/2-quart casserole dish, sprinkle half of the onions on top, and layer potatoes over the onions.
  • Bake uncovered for 25 minutes until hot, then sprinkle with remaining onions and bake for an additional 3 to 5 minutes until onions are golden brown.
