Easy Vegetarian Stuffed Mushrooms

Whip up these flavorful vegetarian stuffed mushrooms with minimal ingredients for a crowd-pleasing appetizer.
Ingredients:
  • 2 tablespoons butter, divided, or more as needed
  • 10 medium brown mushrooms, stems removed and diced
  • 3 ounces garden vegetable cream cheese spread (such as Philadelphia(R) Garden Vegetable), or more to taste
  • 2 stalks green onions, chopped
  • 1 tablespoon chopped fresh chives, or to taste
  • 0.25 cup panko bread crumbs
Instructions:
  • Preheat the oven to a toasty 425°F (220°C).
  • In a skillet over medium heat, gently melt 1 tablespoon of butter until fragrant. Add mushroom caps and saute until tender and golden brown, about 2 1/2 minutes per side. Place cooked mushrooms in a baking dish.
  • In the same skillet, toss in diced mushroom stems with extra butter, if necessary. Cook until mushrooms are tender, around 3 minutes. Transfer to a bowl along with any cooking liquids. Stir in cream cheese, green onions, and chives while still hot. Fill mushroom caps with the mixture until full.
  • In a skillet, melt the last tablespoon of butter. Toss in bread crumbs until fully coated. Generously top each mushroom cap with the buttery crumbs.
  • Place in the heated oven until the tops turn golden and crispy, approximately 9 minutes. Take out and allow to cool for around 3 minutes before serving.
