Gourmet stuffed mushrooms with melted herbed cheese make a delicious vegetarian breakfast.
Ingredients:
  • 56.88 gm olive oil
  • 1 garlic clove, crushed
  • 40.00 ml flat-leaf parsley leaves, chopped
  • 1 tsp thyme leaves, roughly chopped
  • 1 lemon, rind finely grated
  • 4 large flat mushrooms, stalks trimmed
  • 4 thick slices sourdough bread
  • 40g Boursin cheese
Instructions:
  • Get the grill sizzling hot. Mix oil, garlic, parsley, thyme, lemon zest, salt, and pepper in a small bowl.
  • Arrange the mushrooms gill-side down on the grill pan along with the bread. Brush the mushrooms with the aromatic herb-infused oil. Grill everything for 3 minutes.
  • Flip mushrooms and toast to cook the other side. Apply the remaining herbed oil on the mushrooms and sprinkle cheese on top. Grill for an additional 3-4 minutes until mushrooms are cooked and toast is crispy. Season mushrooms with pepper and serve on toast.
