Easy veggie stir-fry

Quick veggie stir-fry with immune-boosting carrots and protein-packed eggs for a delicious weeknight dinner. High in vitamin C and D to keep you healthy. Prep your veggies, heat up the pan, and enjoy!
Ingredients:
  • 300 g broccoli
  • 2 cloves of garlic
  • 1 cm piece of ginger
  • 1 red pepper
  • 6 spring onions
  • 175 g basmati rice
  • 200 g carrots
  • 1 lime
  • 1½ tablespoons soy sauce
  • 40 g unsalted peanuts
  • 1½ tablespoons runny honey
Instructions:
  • 1. Preheat your oven to 200°C/gas mark 6. 2. Boil salted water in a small pan. 3. Cut broccoli into small florets and prep ginger, garlic, and pepper. 4. Toss broccoli and pepper in oil, season, roast for 20 minutes. 5. Cook rice until tender, drain, and cool on a plate. 6. Slice carrots and mix lime juice with half of the soy sauce. 7. Crack egg into a bowl, mix with remaining soy sauce. 8. Drizzle honey on roasted veggies, bake for 5 more minutes. 9. Toast peanuts in a pan, then set aside. 10. Stir-fry spring onions and rice, add scrambled egg. 11. Stir-fry carrots, broccoli stalk, garlic, ginger, and remaining spring onions. 12. Add roasted veggies, lime mixture, and season. 13. Sprinkle chopped peanuts on top and serve with eggy rice.
