Savory chicken cacciatore, quick and satisfying for any night, pairs perfectly with rice or pasta in under an hour.
Ingredients:
  • 3 (8 ounce) bone-in chicken legs with skin
  • 0.667 cup all-purpose flour
  • 0.25 cup olive oil
  • 1 medium green bell pepper, cut into 2-inch pieces
  • 0.5 small onion, sliced
  • 4 cloves garlic, sliced, or more to taste
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon red pepper flakes
  • 0.25 teaspoon ground black pepper
  • 1 (32 ounce) jar roasted red pepper and garlic tomato sauce
  • 1.5 cups water, or as needed
Instructions:
  • Coat chicken pieces in flour, shaking off any extra.
  • In a 10-inch skillet, heat oil over medium-high heat. Brown chicken for 4 to 5 minutes per side until beautifully golden. Set chicken aside. Leave about 1/8 inch of oil in the skillet, discarding the excess.
  • In a skillet, sauté bell pepper, onion, garlic, oregano, pepper flakes, salt, and pepper for 2 minutes. Add spaghetti sauce and a splash of water to slightly thin the mixture. Stir in chicken, ensuring it's coated with the sauce, and simmer until ready. Enjoy!
  • Cover and simmer gently, turning the chicken occasionally and scraping the flavorful brown bits from the bottom of the pan, until the chicken is fully cooked and the juices run clear, approximately 40 minutes.
