Create flavorful ginger-infused coconut oil for cooking with dried ginger slices.
Ingredients:
  • 2 cups very thinly sliced ginger root
  • 3 cups coconut oil, melted
Instructions:
  • Place the ginger slices on the dehydrator tray, following the manufacturer's guidelines. Rotate the slices every 20 to 30 minutes during the 2-hour drying process, until they are crisp and aromatic.
  • Crush dried ginger into smaller pieces and combine with coconut oil in a saucepan. Warm over low heat for a minimum of 2 hours to infuse the oil with the ginger's natural oils.
  • Strain the ginger oil through a fine-mesh strainer to remove large pieces, then pour it through a cheesecloth-lined glass jar for a second straining.
