Egg and bacon bagels

Try our delicious breakfast hack: use a bagel as a ring to cook your egg, then add it to a spicy BLAT for a tasty meal.
Ingredients:
  • Sriracha sauce, to drizzle
  • 2 bagels, split
  • Butter, to spread
  • 9.20 gm extra virgin olive oil
  • 4 bacon shortcut, halved
  • 2 eggs
  • 50g (1/2 cup) coarsely grated tasty cheese
  • 1 tomatoes, sliced
  • 1/2 avocado, sliced
  • Rocket leaves, to serve
Instructions:
  • Enlarge the hole in the top half of the bagel using a 5cm-cutter, then spread butter on the cut sides of the bagels.
  • In a large non-stick frying pan over medium-high heat, crisp up the bacon for 4 minutes. Set aside. Toast the bagel halves cut side down for 1-2 minutes. Crack an egg into one half, then flip the other half over. Sprinkle each half with 1/4 cup cheese, cover the pan, and cook over low heat until the egg is set.
  • Layer crispy bacon, juicy tomatoes, and creamy avocado generously on each bagel half. Sprinkle with peppery rocket leaves and a drizzle of spicy sriracha sauce. Top with the remaining bagel half and finish with an extra drizzle of sriracha for an extra kick.
