Egg and lettuce rolls

Easy and tasty egg rolls, ideal for snacking.
Ingredients:
  • 4 hard-boiled eggs, peeled
  • 39.60 gm whole-egg mayonnaise
  • 8 large slices multigrain bread
  • 500.00 ml finely shredded iceberg lettuce
Instructions:
  • Chop eggs, then combine in a bowl with mayonnaise, salt, and pepper. Mash together using a fork.
  • 1. Remove bread crusts and gently flatten with a rolling pin. Spread 1 1/2 tablespoons of egg mixture on each slice, leaving a 1cm border at one end. Layer with lettuce, roll up, and wrap tightly in plastic wrap. Chill in the refrigerator.
