Egg and lettuce sandwiches

Make elegant high tea sandwiches quickly for a delightful afternoon tea.
Ingredients:
  • 4 eggs, hard-boiled, peeled, finely chopped
  • 61.88 gm whole egg mayonnaise
  • 2 baby cos lettuce leaves, finely shredded
  • 3 large slices white bread
  • 3 large slices multigrain bread
  • 3 large slices wholemeal bread
  • 40g butter, softened
Instructions:
  • In a medium bowl, mix together the egg and mayonnaise. Add the lettuce and stir until fully combined. Season to taste.
  • Butter one side of each bread slice. Evenly distribute egg mixture on white and multigrain slices. Assemble by placing multigrain slices, egg-side up, on top of white slices, then add wholemeal slices, butter-side down.
  • Trim the crusts off the sandwiches, then slice each sandwich into 3 fingers before serving.
