Perfect for picnics and busy schedules, tuna baguettes are a delicious choice on-the-go.
Ingredients:
  • 2 x 185g cans tuna in brine, drained, flaked
  • 81.68 gm mayonnaise
  • Tomatoes, finely chopped
  • 1/2 red onion, thinly sliced
  • 62.50 ml pitted kalamata olives, sliced
  • 62.50 ml char-grilled capsicum, drained, chopped
  • 1 lime, juiced
  • 20.00 ml capers, rinsed
  • 1 long baguette, cut into 6, halved
  • 1 baby cos lettuce, leaves removed
Instructions:
  • Mix together the tuna, mayonnaise, tomato, onion, olives, capsicum, lime juice, and capers in a bowl. Season as needed.
  • Evenly stuff bread with crisp cos leaves and the flavorful tuna mixture. Secure it with napkins or kitchen string, then wrap it in plastic wrap and chill until serving time.
